612g dried peaches
238g dried apricots
3 lts dark grape vinegar
2 1/2kg sugar
500g onions minced
120g salt
75g cayenne pepper

Soak dried fruit in the vinegar overnight.
Boil fruit in the vinegar until soft.
Drain, and reserve the liquid
Cut up the fruit or put through a food mill.
Combine the fruit, sugar and minced onion and boil in the vinegar.
Add the cayenne. (This makes it a very spicy chutney, so omit or put in less if you don't want it too spicy).
Simmer for about 2 - 2 1/2 hours or until the consistency is to your liking.
STIR FROM TIME TO TIME TO PREVENT CHUTNEY FROM BURNING ON THE BOTTOM

I have just made this with only apricots as I can't get dried peaches here, and it is just as good.
