Serves 6
1,2 kg beef fillet (allow 200 gram per person)
30 ml Olive oil
30 ml Soya sauce
...
75 ml fresh cream
150 ml basil pesto
Pour the oil and soya sauce over the fillet. Season generously with black pepper and leave to stand for approximately 30 minutes.
Sear the fillet quickly in a hot pan to seal and brown it.
Transfer the fillet to a roasting tin and bake in a preheated oven at 180 deg C for about 20 minute per kilogram. (medium rare).
Remove from the oven and set aside to rest for five minutes.
Mix the pan juices with the cream and pesto and heat. Slice the fillet and serve with pesto sauce and oven roasted vegetables.
NOTE: PESTO SAUCE DELICIOUS WITH GRILLED KINGKLIP AND OVEN ROASTED VEGETABLES.
