For those of you who own a pressure cooker/instant pot and pressed for time, this is just the recipe for you.
1 tablespoon oil
2 onions chopped
Garlic
Chilli (optional)
2 tomatoes chopped
¼ teaspoon rosemary
1 chicken stock cube or chicken powder
4 large lamb chops
1 cup rice
1 green pepper chopped
Salt and Pepper
Water
Heat oil in pressure cooker and brown chops. Remove from the cooker and fry the onions until soft. Add the rice, tomatoes, green pepper, rosemary, garlic, chilli if using and seasoning. Crumble the stock tables into the mixture and add sufficient water to come halfway up the mixture. Stir well until the stock cube/powder is dissolved. Arrange chops on top of the rice mixture. Pressure cook for 18-20 minutes depending on thickness of the chops.
