* 4 cups grated zucchini
* 2/3 cup flour
* 2 large eggs
* 1/4 chopped spring onions or onion
* 1tsp salt
* 1/4tsp black pepper
* 2 to 3tbsp olive oil
* Grated cheese - optional, amount according to taste
* Chilli flakes - optional, amount according to taste
Don’t skip this step! Place the shredded zucchini in a colander in the sink. Sprinkle it with salt, which will naturally extract some of the water through osmosis, allow it to sit for 5-10 minutes. Squeeze out excess water.
In a large bowl add zucchini and remaining ingredients - except the oil - mix well. Heat oil in a large frying pan. Once the oil shimmers it is ready. Adjust heat as you cook - medium/low. Aim at 3 tablespoons of the batter, use a spoon or ice-cream scoop and gently drop the batter into the oil and flatten it a bit with a spatula.
Cook for 4-6 minutes, flipping halfway, until golden brown. Transfer the cooked zucchini fritters to a paper towel-lined plate and sprinkle with salt and pepper while still warm.
Serve with either sour cream and chives, garlic aioli, dill dip or tzatziki sauce if desired.
