1 kg pumpkin, peeled and cut into large cubes
1/2 cup coconut milk
1/4 cup water
1/4 cup melted butter
1/2 teaspoon powdered cinnamon

3 desertspoons brown sugar
Mix the coconut mil, melted butter and water. Pour over pumpkin. Sprinkle with sugar and cinnamon, cover and bake in a 180 deg C oven until soft. Uncover and bake further in order to reduce liquid and brown. Hasten the process by pre-"nuking" the pumpkin in a microwave for 7 minutes on medium heat.
