Quick, easy and delicious. I use the Pastry for 5 Tarts – see Pastry section.
1 tin condensed milk
2 tins water - use condensed milk tin
1 tablespoon butter
3 heaped tablespoons corn flour
1 teaspoon custard powder
2 eggs
Almond essence
Pinch of salt
Boil condensed milk, water and butter together. Remove from stove. Mix corn flour and custard mix with a little milk. Stir into milk mixture until it thickens. Add salt. You may need to use a beater if too lumpy. Add egg yolks and cook a little longer. Add beaten egg whites and a few drops of almond essence. Fill pastry shell and sprinkle with cinnamon.
