This can be served as a dessert hot or cold and as a cake with lots of fresh cream!!

• 2cups self raising flour
• 1 ½ cups sugar
• 1t bicarb
• 2 eggs
• 1 tin fruit cocktail
• Pinch salt

Combine dry ingredients and sift. Add eggs and fruit and mix well. Pour into baking tin and bake for approx. 37 minutes or until set at 180C or until cooked.
