+- 1kg chicken pieces – I remove the skin
Sauce
* 1 tsp turmeric
* 1 tsp coriander
* 2 tsp cumin
* 1 onion finely chopped
* 1 tsp crushed garlic
* 1 tsp ground ginger – I use fresh, grated
* ½ tsp chilli paste or powder – more if you like it hotter
* 1 Tbs lemon rind finely grated
* Juice of 1 lemon
* 1 tsp chicken stock powder
* 2 Tbs tomato sauce
* 1 cup coconut milk
Preheat oven to 180c (375F)
Mix all the sauce ingredients together. Pour over chicken and marinate for 24 hours before cooking.
Place chicken in small roasting pan and roast uncovered for 20 minutes, basting continuously. Turn and roast for a further 20 minutes. Then place under grill and brown all sides for a further 15-20 minutes.
Serve with basmati rice and salads of your choice. Joy’s Yoghurt Brinjal Salad goes very well with this dish!!!
