It's a dish that my kids always Spur order. And of course they ask Mom to make it as well.
See how easy it is. I just do not put the chillies as I make them.

8 tortillas
8 boneless chicken breasts, skinned
juice of 1 lemon
2 cloves garlic, crushed
2 red chillies, cut into skyfi es
30 ml olyfolie
salt and freshly ground black pepper
200 g mozzarella cheese, grated
200 g cheddarkaas, gerasper
4 handfuls fresh cilantro, coarsely chopped
Greek yogurt to match before them
You use two tortillas per person. Cut the chicken into slices.
Fry the chicken in the olive oil in a pan with the lemon juice,
garlic and chillies. Season with salt and pepper. Combine the mozzarella and cheddar cheese.
Place about 2 handfuls of cheese on a tortilla, a handful of cilantro, and then the chicken.
Put another tortilla on top and push it a little fast.
Make a hot pan - no oil - and put the tortilla in the pan.
Print right from your hand, the tortilla and turn it around when it is brown and brosserig.
Now you can end with an egg lifter print. (It was about 3 minutes a side in the pan.
The cheese was melted nice to be in the middle.) Remove and cut into 4.

Guacamole and salsa are a must along with quesadillas
