| A bright and colourful jam with a good set. • 1kg cherries • 1kg ripe gooseberries • 2kg white sugar • 2 lemons • Pinch of salt Was the fruit, tope and tail the gooseberries and stone the cherries. Add fruit to pan with the juice from the lemons. Bring very gently to the boil and simmer for about 25 minutes. Add the sugar and stir well until it has dissolved. Bring to the boil and boil steadily until set. Try not to boil too furiously otherwise you will harden the gooseberry skins. Skim, pot and seal. | |
