| Apples give bulk and set to a good, spreadable and economical jam. • 1kg cherries • 700g granny smith apples • 150ml water • 1.350g white sugar • Pinch of salt • 7 hot, dry and sterile jam jars Wash the cherries, peel, core and chop the apples and tie the peels and cores into a muslin bag. Put apples, bag and water into a large pan and cook until the fruit is soft. Add the cherries and continue to cook gently until they are tender but unbroken. Remove any stones which rise to the top, remove muslin bag and add the sugar. Stir well until the sugar has dissolved, bring to the boil. Boil rapidly until set. | |
