This is for all my Irish friends out there - enjoy!!
• 5 large or 6 medium potatoes
• 4 tablespoons cream
• 4 tablespoons milk
• 2 tablespoon butter
• White pepper and salt to taste
• 1 medium sized green cabbage finely shredded
• 1 tablespoon butter
• 1 bunch spring onions with green tops, finely sliced
• 2 tablespoons chopped parsley
• Salt and pepper to taste
Boil the potatoes in their jackets until soft. Peel off the skins and put the potatoes through a potato ricer or mash them until very smooth. Warm the cream, milk and butter together and beat into the potato. Season to taste. Steam or stir-fry the cabbage until soft but still green. Remove from the heat and add the butter, sliced spring onions, parsley and seasoning. Fold the cabbage into the potato and sere with any grilled or roast meat!!
