| Cabbage and aubergine (brinjals) are my favourite vegetables and I love this red cabbage pickle. I have also chucked my table salt in the trash can and switched to pink Himalayan salt, so much healthier. I saw Jamie Oliver make this pickle on one of his TV shows and decided to try it. For me, it is delicious, but then I love ALL pickles. - 100ml red wine vinegar/apple cider vinegar/fresh lemon juice
- 1 teaspoon sugar – adjust if needed
- ½ red cabbage – finally shredded
Toast the fennel seeds in a large pan for 1 minute, remove from heat. Add the vinegar/lemon juice, sugar and a good pinch of pink salt. Add shredded cabbage and mix well. Take your hands and squeeze the cabbage etc a few times. Place in fridge until needed, stir every now and then until needed. | |
