3 sweet potatoes- washed
3 cloves garlic, crushed
1/4 cup olive oil
5 teaspoons lemon juice
1/2 teaspoon paprika

salt and black pepper to taste
500 gram baby spinach leaves
6 - 8 fresh strawberries
SALAD DRESSING
Pips of one small paw-paw
1/3 cup olive oil
2 tablespoons white wine vinegar
2 teaspoons caster sugar
1/2 teaspoon Dijon Mustard
1/2 teaspoon salt
Preheat oven to 200 deg. C.
Slice unpeeled sweetpotatoes in 1 cm wedges, Mix the garlic, olive oil, lemon juice, paprika, salt and pepper together and pour over wedges. Bake for approximately 30 minute till golden brown and crispy.
Place paw-paw pips in food processor and mix until it resembles coarse black pepper. Ad the remaining ingredients.
Serve with spinach leaves and strawberries.
