Quick and easy to make and so delicious used so many ways, not only as a dressing. It’s loaded with fresh herbs, garlic, lemon juice and tahini. If you want it spicy, add jalapenos. Add capers for a briny flavour. Use it on grilled meat and fish. Delicious on deboned chicken or breasts and pan fried. Use on wraps. It really is very versatile. Mint, basil, tarragon, chives, dill, parsley, mint. Coriander. Whatever you have available. Spring onions including the green leaves.
I spread a thick layer on a slice of bread, NOT the store bought sliced bread, that is terrible. No butter needed. I use sour dough bread. Added cheese, tomato and seasoning. Cook in a pre-heated air fryer, on 200 and cooked for about 5 minutes. Or under the grill. So good.
• 1 ½ cups fresh parsley, leaves and tender stems
• 1 ½ cups coriander or basil
• ½ cup dill
• 1 or 2 spring onions, green leaves included
• 2 cloves garlic
• Kosher/Pink salt to taste
• Red pepper flakes (optional)
• ½ cup tahini
• Juice of 2 lemons
• ¼ to 1 cup of water, depends on how thick you would like it
Add the fresh herbs, spring onion and garlic to a blender, add jalapeños if you want it hotter. Season will salt and red pepper flakes. Blend until finely chopped. Add the tahini and lemon juice and blend until well mixed. Mixture will be think at this point. With blender running slowly add water until it reaches your desired consistency. Taste and adjust seasoning.
Makes about 1 ½ cups. Store in a clean jar for up to 5/6 days. Make a few hours ahead of time so that the flavours develop.
I am going to experiment to see how well the sauce freezes as I doubt that I will use all of this before it expires. Perhaps halving the recipe would be a good idea if large quantities are not needed.
