I really enjoyed his recipe.
400-500g 16 gnocchi, store bought or homemade
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 red onion, chopped
400-500g cherry tomatoes
6 garlic cloves, minced
¼ cup olive oil
1½ teaspoons dried oregano
1½ teaspoons dried basil
1 teaspoon Himalayan or Celtic salt - table salt belongs in the trash
½ teaspoon dried thyme
¼ teaspoon red pepper flakes
Freshly ground black pepper
3 to 4 handfuls baby spinach
Parmesan cheese, to serve
Preheat the oven: Heat the oven to 425°F.
Mix everything together making sure that everything is well coated with spices and oil. Spread out evenly on a sheet pan.
Bake for 40 minutes stirring halfway through. Five minutes before the gnocchi and vegetables are finished, remove the sheet pan from the oven. Add the spinach and stir to combine. Return to the oven for the remaining five minutes, just until the spinach is wilted.
Serve with shaved parmesan cheese, and a drizzle of olive oil.
