Do try this salad, it keeps very well for a few days in the fridge!
* Line large dish with lettuce leaves
* Layer, chopped spring onions, chopped water chestnuts, diced celery, chopped green or red peppers
* cover with frozen peas and spread 1 ½ cups mayonnaise on top
* sprinkle with parmesan cheese - fresh is better and 2 tablespoons sugar
Cover and leave in fridge overnight.
Next day
* Sliced 4 hard- boiled eggs and layer
* tomatoes and layer
* Fry chopped bacon until crisp and mix with chopped parsley and raw sliced mushrooms and arrange on top
