If you do not like this dish, then there is something wrong with you. I’ll excuse those who do not like blue cheese though. Another Tim Noakes recipe.
• 4 gem squash, cut in half and seeds removed
• 150g blue cheese
• 1 handful of sage leaves
• 100g butter
Steam or boil the squash until it is soft and tender. Remove from the water and place in a tray. Crumble the blue cheese over each squash. Melt the butter in a pan and gently fry the sage leaves until it turns golden. Spoon the butter over the squash and grill in the oven until the cheese is dark brown.
