Makes enough for 10 dishes
Red masala is far hotter than green masala.
• 100g red dried chillies
• 50g fresh root ginger
• 30g garlic cloves
• 30ml (6 teaspoons) salt
• 45ml (3 tablespoons) cooking oil
• 2ml (1/2 teaspoon) turmeric
• 45ml (3 tablespoons) water
Follow the instructions for Green Masala adding the water to mix.
To Store: Same as for Green Masala.
