 CHEESE FILLED CHICKEN CUTLETS

PostSubject: CHEESE FILLED CHICKEN CUTLETS   Sat Sep 10, 2011 7:35 am

• 6 skinned chicken breasts
• Season flour
• 75g butter
• 150g mozzarella cheese – sliced
• 500g sliced mushrooms
• 200ml chicken stock
• 200ml milk
• 125ml dry white wine
• Parsley

Slice each chicken breast horizontally, not through. Pound with mallet. Coat chicken with season flour, brown on both sides. Remove from heat. Arrange cheese slices on one half cutlet, top with remaining cutlet. Secure with toothpicks. Fry mushrooms, stir in milk, wine and chicken stock and add to cutlets. Simmer for about 10-15 minutes or until cooked.

• 30ml Olive Oil
• 5ml Crushed Garlic
• 5ml Grated Ginger
• 1 Onion, Sliced
• 4 chicken Breasts, Sliced
• 500ml Plain Yoghurt
• 7ml Chopped Coriander
• Lemon Juice
• 30ml Woolworth’s Tikka Curry Paste - or similar

Heat oil and fry garlic, ginger and onion until soft – about 8 minutes. Add Tikka curry paste and fry for another minute. Add chicken and stir-fry until cooked – above 5 minutes. Add yoghurt, coriander and lemon juice and heat through. Serve with rice and a fresh tomato, onion and coriander relish.
