So quick and easy AND delicious!!
Serves 6
• 18 slices tomato
• 18 slices mozzarella
Basil Cream
• 30g fresh basil
• 125ml mayonnaise
• 250ml fresh cream
• 2.5ml chilli paste or powder
• Salt & Pepper to taste
Process basil and mayonnaise in the food processor. Add cream, chilli paste and seasoning. Do not over process or the cream will become butter. Make stacks of the tomato and mozzarella on a large platter or individual places. Spoon the basil cream around the stack and decorate with a basil leaf. Sprinkle with lots of black pepper.
Avocado can also be added in between for extra colour.
