Room temperature ingredients are always best when baking unless otherwise stated.  Personally I always sieve my dry ingredients twice.  

• 1 cup cheese
• 1 cup flour
• 1 egg
• milk
• ½ teaspoon salt
• Good pinch of cayenne pepper
• ½ teaspoon mustard powder
• 2 heaped teaspoons baking powder

Mix all dry ingredients and cheese together.  Break the egg into a cup and fill with milk and beat.  Add to the dry ingredients and mix well.  Fill greased muffin pans ¾ way up the pans.  Bake at 200 for about 12 minutes until slightly brown.  More cheese may be added and will make no difference to the way they rise.  

Delicious butter and sprinkled with biltong dust, Bovril, chopped ham etc.
