I love this recipe as everything is cooked in one pot. No need to brown meat. Through everything into a pot and cook. It's as simply as that.
Serves 4
• 600-800g stewing lamb cut into cubes, can also use lamb shanks
• 1 ½ cup water
• 1-2 cloves garlic, crushed
• 1Tbs (15ml) vegetable stock powder, I only use Ina Paarman or
use similar
• 1/2tsp dried rosemary, I use Ina Paarman Rosemary & Olive
seasoning
• 1 red chilli, finely chopped
• 1 large onion, chopped
• ¼ cup fresh lemon juice, I use a little more
• 2 large potatoes, cubed
• 500g green beans, finely sliced. Frozen works just as well
• 1Tbs butter or 2Tbs olive oil
• Garlic pepper seasoning to taste, I use Ina Paarman
• 2tsp (10ml) fresh lemon rind, finely grated
Simmer meat in the water with the garlic, stock powder, rosemary, or rosemary seasoning, chilli, onion and lemon juice until nearly tender, about 1 ½ hours. Add potatoes, simmer until done and add beans, garlic pepper seasoning and grated lemon rind. Adjust seasoning.
