Here is a real South African recipe, it can be cooked on the stove or in a potjie - see the other waterblommetjie recipe. For those of you who do not know what they are, they are small water flowers, check it out on the web. Green beans make an excellent substitute but for the South Africans, do try this with waterblommetjies!!!!
• 1kg lamb – flank, shin or shoulder cubed
• 2 tablespoons oil
• 1 tablespoon butter
• 1 teaspoon salt and black pepper mixed
• Pinch of sugar
• 2 onions, chopped
• 1 cup chicken stock or white wine
• 1 tablespoon vinegar
• 3 cloves garlic, crushed
• Pinch of chilli powder
• 500g waterblommetjies or green beans, cleaned
• 2 potatoes, diced
• 2 tablespoons wine vinegar
Brown the meat in the oil/butter mixture in batches. Remove and season with sugar, salt and black pepper. Sauté the onions in the same saucepan. Add the stock, vinegar, garlic and chilli power. Bring to the boil. Return the meat to the saucepan and simmer slowly until the meat is nearly done. Add the waterblommetjies or green beans, potatoes and vinegar. Simmer until the vegetables are done. Season to taste. Sprinkle with chopped parsley and serve with rice.
