| 3 Tablespoons Olive oil
8 piece of chicken cut into pieces and dusted with flour
200 gram Fresh chorizo sausage
1 teaspoon dried Taragon
1 Onion, chopped
6 cloves garlic, crushed
2 stick celery, sliced
1 small pumpkin or butternut, peeled and roughly chopped
200 ml sherry or muscadel
500 ml chicken stock
400 gram chopped tomatoes
2 bay leaves
salt and pepper to taste
1 teaspoon chopped fresh parsley for garnishing
Preheat the oven to 180 deg C.
Fry the chicken and chorizo sausage in olive oil until golden brown. Remove with a slotted spoon and reserve - you may need to do this in two batches.
Add the onions, garlic, celery and pumpkin to the casserole and cook for 20 minutes or until the mixture is golden brown.
Add the sherry/muscadel,chicken stock, tomatoes and bay leaves and season with salt and pepper.
Add the reserved chicken/chorizo and taragon back into the casserole dish. Cover with a lid and cook in the oven for about 1 hour.
Garnish with parsley and serve with with rice.
