Here in South Africa it's winter time and soups are most welcome. This delicious cauliflower is so good, the combination of flavours are delicious. It is quick and easy to make. Microwaving does give it a 'cleaner' flavour, but it can be made on the stove too.
This is another Ina Paarman recipe, and is an old favourite of mine. She demonstrated this at one of my many cooking lessons with her. Serves 6.
* 3 tablespoons (45ml) butter
* 4 tablespoons (60ml) water
* 4 medium onions, chopped
* 2 cups (500ml) cauliflower, broken into small florets
* 3 tablespoons (45ml) flour
* 2 cups (500ml) chicken stock
* 100g blue cheese, crumbled
* 2 cups (500mg) full cream milk
* Salt and Pepper to taste
Combine the butter, water, onions and cauliflower in a covered microwave bowl and microwave for 10 minutes. Stir from time to time during cooking time. Add the flour and stir in well. Add the chicken stock and microwave covered for 5 minutes. Add the blue cheese and liquidise. Add the milk. Adjust seasoning, reheat for 3-4 minutes and serve garnishing with black pepper and more crumbed blue cheese.
Variations
Fresh chopped coriander root and stems (2 tablespoons) can be added in place of the cheese, garnish with coriander leaves. Courgettes and Feta Cheese may be used in place of Cauliflower and Blue Cheese.
