This is the best mushroom soup I have ever tasted!
6 Tbsp butter
1 onion thinly sliced
350g button mushrooms, halved
4 cups chicken stock
1 sprig parsley
4 Tbsp sherry
salt and pepper
Cook onion in 2 Tbsp butter until soft
Add remaining butter and add mushrooms.
Cook for about 10 mins
Pour in the chicken stock, add parsley and bring to boil.
Reduce to a simmer and cook for 1 hour.
Blend
Add sherry and season according to your taste.
