One of my all time favourites!!!
Cake
• 100g soft butter
• 350ml self-rising flour
• 5ml baking powder
• 200ml caster sugar
• 2 extra-large eggs
• 90ml milk
• Grated rind of 1 large lemon
Topping
• 45ml lemon juice
• 100ml castor sugar
• Strips of crystallized lemon rind
Cake - Place all the ingredients in a mixing bowl and beat well with an electric mixer for 2-3 minutes or until well blended and smooth. Turn into prepared tin, spreading evenly. Bake at 180oC for 30-40 minutes or until firm to the touch.
Topping - Meanwhile make a glaze by beating together the lemon juice and castor sugar. Drizzle over the cake as soon as it comes out of the oven. Leave to cool. Cut into squares and decorate with strips of crystallized lemon rind.
