This one is for you Paula Louw. Enjoy.

This is one of the best lemon syrups that I have ever tasted, do try this.

* 12 Lemons
* 2,5kg Sugar
* 1 Packet (15g) tartaric acid
* 1 Packet (15g) Epsom salts
* 1 Packet (15g) cream of tarter
* 1,5 Litres boiling water

Wash the lemons and grate the outer rind carefully. Squeeze out the juice and add to the rind.... Add the rest of the ingredients. Stir until the sugar has dissolved and leave overnight. The following day strain the syrup through a muslin cloth or fine sieve (using a muslin cloth results in a clearer syrup) and pour into clean bottles. Served mixed with iced water or soda water.
