SYRUP
8 x 250 ml sugar
1 liter water
50 ml golden syrup
2 piece cinnamon stick
2 ml cream of tartar
2 ml Tartaric Acid
DOUGH
5 x 250 ml cake flour
30 ml baking powder
pinch of salt
1 ml fine nutmeg
60 ml butter
500 ml Buttermilk
oil for deep frying
Syrup: Mix all the ingredients together and bring to the boil until the sugar has melted. Turn heat down and boil for approx. 10 minutes without stirring. Allow to cool and put a fridge to cool down.
Dough: Sift the flour, baking powder, nutmeg together. Rub the butter in with your fintertips until it resembles breadcrumbs. Add the buttermild and mix to a soft dough. Knea well and place in cling wrap and let it rest for 1 hour.
Roll the dough 3 - 5 mm thick and cut into stips of 4 cm in width. Cut each stip in 7 cm long strips. Cut 3 legs in each strip and leave the one end intact. Plait the three legs and secure the other end. Cover the koeksister with a damp cloth.
Fry the koeksister in hot oil until golden brown, remove with a slotted spoon and dump and the ice cold syrup. Let it stand for a few minutes in the syrup and remove with a slotted spoon. Place on a drip rack in order for syrup to run down. Put in fridge to get cold. Serve ice cold.
Recipe makes about 50 koeksisters.
