I have tried many versions of this all-time classic but to me this is the best! No matter where my son is in the world, he will contact me and ask me for this recipe.  It really is best in the microwave. This is for you Terry!!!

60ml Sago - rinsed
500ml Full Cream Milk
45ml Sugar - I use less
1/4t Nutmeg
Pinch of Salt
Zest of lemon or orange - optional

Place ingredients in a large bowl. Microwave on full power for 5 minutes, stir well. Cover with vented plastic wrap, microwave on full power for 3 minutes. Reduce to medium and cook for 20 minutes or until sago is soft, remembering to stir every 3-5 minutes. Stand for +- 10 minutes.

Variations

• Fruity Sago: Serve with a tart stewed fruit, such as apricots or plums
• Citrus Sago: Add 5ml finely grated lemon or orange rind to the main ingredients before cooking
• Chocolate Sago: Add 30g chopped chocolate to the pudding after cooking. Stir to melt.

CAUTION:  This boils over very quickly.  Make sure to use a BIG dish and stir often.
