I love this pastry recipe.  Once divided into 5 equal pieces, wrap in cling film and freeze.  Defrost and use as needed.  I always sift my flour twice.

3 cups flour – sifted twice
½ cup sugar
2 teaspoon baking powder
2 eggs
250g butter
½ teaspoon salt - use less if using pink salt

Cream butter and sugar.  Add beaten eggs and mix well.  Add all dry ingredients and mix until it forms a dough.  Knead well and place in fridge for 15 mins.  Divide into 5 pieces and use as needed.  Bake at 180 for 15 minutes or until golden brown.
