This salad always goes down a treat.
1/2 cup sunflower seeds - toasted
1 pkt 2 minute noodles, chicken flavour
1 medium cabbage finely shredded
1 bunch spring onions sliced thinly with green tops
Sauce1/2 cup oil - I use MCT oil (coconut oil must be liquid, not solid)
1 tablespoon soy sauce
1/4 cup sugar - I use a little less
1/2 cup white wine vinegar or cider vinegar
Spice from the 2 minute noodles
Heat soy sauce, sugar, vinegar and oil. Add 2 minute noodle spice, stir well and allow to cool. Toss the remaining ingredients together and pour the sauce over. Toss every few minutes.
This dish is even better the next day!
