Do yourself a favour and try this recipe. It is much better with white wine though, but chicken stock can be used.
• 1kg hake – skinned and filleted
• Seasoned four
Seasoning Paste
• 30ml lemon juice
• 60ml olive oil
• 2 cloves garlic – crushed
• ¼ cup coriander leaves loosely packed
• 1 ½ teaspoon chicken stock powder
• 1 red chilli – optional
• baby potatoes – par-boiled and halved – quantity depends on how much you want
• 30ml melted butter
• Garlic and herb seasoning
• ½ cup dry white wine or chicken stock
Dust the fish with seasoned flour. Place in an ovenproof dish. Mix the ingredients for the seasoning paste except the wine and spread over the fish. Top with potatoes tossed in the melted butter. Season with garlic and herb seasoning. Carefully pour in the wine at the side of the dish. Bake at 220oC for 30 minutes.
