I love this recipe. It is very rich, so please don't serve with anything else that is rich. You only use red wine as a liquid but please, if the wine is not good enough to drink then it's not good enough to cook with!!

• 500g belly pork cut into cubes – not too fatty or use pork neck or mix both
• 1 onion diced
• 2 cloves garlic crushed
• 1 red fresh chilli – more or less depending on taste
• Good quality red wine
• 1 headed teaspoon origanum or mixed herbs – or use a mixture of both
• 4 medium potatoes cubed
• Salt & Black Pepper to taste

Brown the pork until lightly brown, remove from pan and season lightly. Fry onion and garlic, return the pork back into the pot and add the chilli and herbs, stir well. Add red wine – enough to cover the pork totally. Simmer with lid on until just about done. Add the potatoes and cook until done and the wine gravy starts to thicken. Adjust seasoning to taste.

Served with steamed vegetables and or salad.
