I have tried many crunchie recipes and this has to be my favourite of them all. I always add a pinch of salt to my baking and most desserts as it seems to improve the flavour!
500ml oats
175ml sugar
250ml white flour or brown bread flour
250ml coconut
150g butter
25ml golden syrup
5ml bicarbonate of soda
Pinch of salt
Mix oats, sugar, flour, salt and coconut. Melt butter, stir in syrup, then add bicarb. When the mixture foams, stir into the dry ingredients, mix well and press into a medium sized, greased biscuit tray. Bake at 180C for 15 minutes or until lightly browned. Cut into squares and removed from tin when cold.
Variation - add a handful of seedless raisins and/or sunflower seeds to the dry mixture.
