Yummy with a braai. And it is scrumptious.
4 sweet potatoes cut into wedges of 1 inch thick
3 tablespoons butter
3 Tablespoons golden syrup
3/4 cup brown sugar
1/2 cup boiling water
ginger biscuits
Boil sweet potatoe in water until cooked. Melt butter, syrup and brown sugar in 1/2 cup boiling water and cook over low heat until a syrup is formed.
Place a layer of sweet potatoe in an oven-proof dish, one layer ginger biscuits and another layer of sweet potatoe. Pour the syrup over. End with a layer of ginger crumbed ginger biscuits. Bake at 180 deg. C for approx 30 minutes. Serve with your favourite braai.
