• 125g butter
• 100g (125ml) white sugar
• 1 egg
• 7ml vanilla essence
• 275g (500ml) cake flour
• 10ml baking powder
• 2ml salt
• apricot jam – use enough to spread generously over the dough
Cream the butter, white sugar, egg and vanilla essence together. Sift the flour baking powder and salt together. Add this to the egg mixture and mix to a stiff dough.
Press two thirds of the dough into a prepared swiss roll pan. Spread apricot jam over the dough. Grate the remaining dough coarsely over the top. Bake until golden brown for about 20 minutes in a preheated oven at 180C.
Cut into 5 x 5cm squares and allow to cool.
NB: as an alternative to apricot jam, use Christmas mincemeat. I have tried using other jams but apricot is the best.
