There are a few recipes on my website but this is my favourite one.
Serves 8 to 10* 2kg hake OR kingklip fillets, into serving portions
* oil for frying
* 4-6 onions, sliced
* 25ml curry powder
* 5ml turmeric
* 25ml brown sugar - adjust to taste, i don't like it too sweet
* 2 red chillies, seeded and chopped
* 5ml ground fresh ginger - I grate the ginger
* 125g seedless raisins, optional
* 650ml wine/white vinegar
* 150ml water
* 2 large bay leaves
* 45ml apricot jam
* salt and black pepper
Fry the fish in the oil, 3 or 4 minutes each side. Drain on a paper towel and cool. Sauté onions in 50ml oil. Add the rest of the ingredients except the vinegar and water. Stir fry for about a minute. Add vinegar and water, stirring to make a smooth thin sauce. Add the bay leaves, jam and seasoning to taste. Simmer, uncovered for 10 minutes. Layer fish in a deep glass or suitable dish, pour over the sauce. Cover tightly and cling wrap and refrigerate for at least 2 days before serving.
