This is a meatless bobotie, not completely vegetarian as it has eggs and milk
1 can lentils (or 1 cup dry lentils cooked till soft)
1 small punnet mushrooms
1 small onion
1 clove garlic crushed
1" ginger grated
1 tsp curry powder
1 Tbsp apricot jam
A handful of dried apricots chopped
1 Tbsp Mrs Balls Chutney (or the homemade version found on this forum)
Fry the onion till opaque
Add the garlic and ginger and fry for some seconds
Add mushrooms and cook until brown and have released water
Cook on fairly high heat until most of the water has gone
Add curry powder and fry for a bit
Add all the other ingredients and mix well.
Transfer to oven proof dish
Make a custard of 1 egg and milk measuring up to 1 cup and pour this over the mixure
Place about 6 lemon leaves (or bay leaves, but fresh lemon leaves are best) and cook until the custard has set.
I use double the amount of apricot jam and chutney as I like bobotie that has lots of "gravy".
Serve with yellow rice.
