Do try this recipe, it is superb!!!
3 large brinjal - sliced and salted for 20 mins
2ml chilli powder
2ml turmeric
5ml salt
Oil to base brinjal with
500ml yoghurt - I use more
2ml fresh garlic, pounded
7ml cumin seeds, roasted in pan & finely crushed
1/2 green chilli chopped
2ml mustard seeds
30ml dhunia/coriander leaves chopped
After 20 mins rinse brinjal well and dry on paper towel. Mix chilli powder, turmeric and salt with enough oil to brush both sides of the brinjals well. Bake at 180c until soft. Mix yoghurt, garlic, crushed cumin, chopped green chilli and salt to taste, about 2ml - together well. Pour yoghurt mixture into a flat serving platter and carefully place brinjal rounds on top of the yoghurt mixture. Sprinkle with mustard seeds and chopped coriander.
