4 cups Flour
4 eggs
2/3 cup sugar
3 tablespoons butter or margarine (melted)
8 teaspoons baking powder
1 teaspoon salt
2 cups milk
Beat the egg and sugar together. Add 1 cup of milk and butter.
Sift in the dry ingredients and mix well. Add the other 1 cup of milk and mix until mixture is smooth.
Pour spoonsfuls of batter in hot oil. Place few pecan nuts in the batter. Fry on both sides until brown and cooked.
Serve with a slice of lemon and whipped cream and maple syrup on the side.
