This is THE best daal I have made in ages.

2 cup masoor dal (red lentils)
1 1/2 tsp garam masala
1 1/2 tsp turmeric
1 tsp salt
1/3 cup oil
1 1/2 onions chopped
1 head garlic, separated, chopped
1 inch piece ginger chopped
2 jalapeno chiles (fresh) chopped (or birds eye or any hot chilli)
2 tomatoes chopped
1 bunch coriander, chopped
Water

Bring 1 lt of water to the boil and add the lentils
Cook 10 mins
Add 1/2 tsp garam masala
1/2 tsp turmeric and salt
Simmer and add more water if necessary. Should be like thick cream.
When lentils are soft turn off heat.
In frying pan/wok heat oil
Add oinions and cook until tender and translucent
Add garlic
ginger
Chillies
Continue to fry until onions are deep yellow.
Add remaining 1 tsp garam masala and turmeric
Stir and cook until spices start to stick.
Add tomatoes and cilantro.
Cook until tomato softens
Pour in lentils and simmer to blend flavours.
Add more salt if desired.
