Meringues are the easiest things to make however, there are a few tips which will help to achieve this. If you do not follow these tips, your meringues will flop!!
It is most important to ensure that your mixing utensils and bowls are clean, any oil or dirt in the bowl will result in a flop. If you want to make sure that it is clean, pour boiling water into the bowl with a few squirts of lemon juice, add your mixing blades in there as well, dry and continue.
• Egg whites must be at room temperature
• Always use a glass or copper bowl with mixing
• Electric or hand mixers must be extremely clean
• Never use a plastic bowl
• No egg yolk must be visible
