My son went to SACS school in the Western Cape. In 1998 the partents and teachers got together and created a recipe book as a fund raising project. All the recipes in this recipe book have been tried and tested. The ones that I post here are delicious.
PLEASE TRY THIS !!!
• 1 bunch of spinach coarsely chopped
• 2 large onions
• 90g butter
• 4 tablespoons butter
• 500ml milk
• Pinch of nutmeg
• Salt & pepper to taste
• Feta Cheese
Fry onions gently until soft and golden. Add chopped spinach and stir-fry until wilted. Sprinkle flour over vegetables. Add stock stirring constantly. Simmer on low heat for 10 minutes. Liquidise or blitz and return to pot, simmer for another 10 minutes. Serve and sprinkle with crumbled feta cheese and pita bread wedges. (Recipe below)
PITA BREAD WEDGES
• Pita breads
• Butter or Olive Oil
• Garlic Salt or Herb and Garlic – use whatever seasoning you like
Split the pita bread into two. Butter/oil each round slightly on the split side. Cut into quarters and arrange on a baking tray. Sprinkle liberally with season. Bake at 180c for approximately 10 minutes making sure they do not burn. These wedges can be stored in an airtight container when cooled for up to 2 weeks. Can be served with soups or with dips or as nachos. Delicious and VERY more-ish!!
