Makes 1½ x 400 g jars
This jam is best made in the microwave as the strawberries remain whole, and the entire process takes only 18-20 minutes. End-of-season strawberries are cheaper and still make very good jam. Mulberries or youngberries can be used in the same way.
500 g strawberries
2 T (30 ml) lemon juice
350 g sugar (± 11/3 cups)
Grease the inside rim of a large, microwave-proof bowl with a little butter to prevent the jam from boiling over.
Wash and then hull the strawberries, keeping them whole. Place them in the bowl with the lemon juice. Without covering the bowl, microwave on high (100%) for 3 minutes. Add the sugar and stir well. Microwave on high for a further 5 minutes. Stir and scrape down the sides of the bowl. Microwave on high for a further 10 minutes, stopping and stirring occasionally.
Bottle while hot in warm, dry, sterilised jars. Turn the bottles upside down to sterilise the lids.
