 POTATO GONOCOCCI WITH TOMATO SAUCE

PostSubject: POTATO GONOCOCCI WITH TOMATO SAUCE   Sun Apr 03, 2011 10:35 am

• 1kg old potatoes, peeled & chopped
• 1 egg yolk
• 25g grated parmesan cheese – I use more
• 75 g plain flour

TOMATO SAUCE

• 15ml olive oil
• 2 cloves crushed garlic
• 1kg tomatoes, peeled & chopped
• 30ml chopped fresh basil – I use more
• 15ml chopped parsley

Boil potatoes until tender, drain well, cool for 10 minutes, mash. Combine mashed potatoes, egg yolk and cheese. Gradually add flour, mix very well.

Divide dough into 4 portions. Roll each portion on lightly floured surface to form a sausage 2cm in diameter. Cut diagonally into 2.5cm slices.

Just before serving, add gnocchi to large pan of boiling salt water, boil uncovered for about 2 minutes or until gnocchi oat to the surface. Drain well.

TOMATO SAUCE
Heat oil in an, add garlic and fry for 1 minute Add tomatoes and simmer uncovered for about 10 minutes or until thickened. Stir in herbs.

NB: I add ½ teaspoon sugar and fry 1 onion with the garlic. Change to suite your taste.
