4 large eggs
2 cups mils
2 tablespoons vanilla essence
1/2 teaspoon salt
4 cups crushed corn flakes
2 tablespoons sugar
1 teaspoon cinnamon
8 slices day-old firm white bread

In a shallow pan, whisk together eggs, milk, vanilla and salt.
In a bowl mix together cornflakes, sugar and cinnamon and then spread on a plate.
Soak the bread in egg mixture on each side for about 1 minute. Press soaked bread into corn flake mixture. Heat a little butter in a small frying pan over medium heat. Cover and cook soaked bread in the pan 2 - 3 minutes on each side, or until lightly browned and crisp. Serve with crisp bacon and your favourite syrup.
