You cannot go wrong with this recipe. Always remember to sift dry ingredients three times for any baking it makes for lighter cakes, biscuits etc.
* 2 cups of flour
* ½ tsp salt
* 2 tsp baking powder
* 4 tbs butter
* 1 egg
* ½ cup water – approximately
Syrup
* 1kg sugar
* 1 ½ cups water
* ½ tsp ground ginger
* 2 sticks of cinnamon
Juice of 1 lemon
Sift the dry ingredients three times. Rub in the butter and mix to a pliable dough with the egg and water. Knead very well. Leave to rest for 3-4 hours and prepare the syrup. Make the syrup by dissolving the sugar in water. Add spices and just bring to the boil. Chill very well before use. Roll out the dough to about 0.5cm thick, cut into strips about 10cm long and 4cm wide and cut each strip into three – but not right through at the top. Plait. Deep fry in oil. Immediately dip them into the ice-cold syrup. Place the syrup bowl in a container of ice cubes to keep the syrup cold.
