1 whole chicken/ chicken fillets, deboned and cut into pieces
200 gram brocolli, blanched in boiling salted water for about 5 minutes
125 ml mayonnaise
5 ml curry powder
1 tin mushroom soup
juice of 1/2 lemon or 15 ml concentrated lemon juice
10 ml butter or margarine
250 ml fresh bread crumbs
250 ml Cheddar cheese
salt and pepper to taste
Place chicken piece in oven-proof dish. Cut brocolli florets into smaller pieces and place on top of chiicken. Mix soup, mayonnaise, curry powder and lemon juice together and pour over chicken. Cover with bread crumbs. Sprinkle cheddar cheese on top and bake at 160 deg C until sauce start bubbling and cheese is nice and brown.
Its easy, delicious and very appetizing.
